[Recipe] Abalone Ba Zhang / Rice Dumpling Cake!

Dragon boat festival is around the corner and that means it's time for Ba Zhang / Rice Dumplings! Hooray!


Wanted to make my own Ba Zhang, but then I realised that I don't know how to tie it properly. Plus, I'm lazy to make 1 Ba Zhang at a time. So I decided to make a Ba Zhang cake instead.



Disclaimer first ah. I am not a chef and cannot be even considered as a home cook. I rarely step into the kitchen and the kitchen appliance that I use the most often is the microwave. So follow this recipe at your own risk hor. But I got to say it turned out well and tasted pretty good la hehe.



To make this bazhang cake or any regular bazhang, you will need to prepare the night before. There are 5 main steps:


1. Soak overnight - Rice & leaves


Ingredients

  • 7 - 8 pieces of Dried Bamboo Leaves

  • 400g Glutinous Rice (I am using New Moon's Thailand Premium Glutinous Rice)


To do:

  • Soak glutinous rice in water overnight

  • Soak dried bamboo leaves in water overnight


2. Marinate chicken


Ingredients

  • 300g chicken thigh

  • 1 teaspoon salt

  • 2 tablespoons Dark Soy Sauce

  • 1 tablespoon Abalone Sauce


To do:

  • Cut the chicken into bite size

  • Mix everything together and let it marinate for at least 2 hours


3. Fry mushrooms


Ingredients

  • 30g dried shrimps

  • 12 dried mushrooms

  • 1 tsp white pepper

  • 1 tbsp dark soy sauce

To do:

  • Soak the dried mushrooms in hot water

  • Once the mushrooms are re-hydrated, fried it with the dried shrimps, white pepper and dark soy sauce


4. Fry rice


Ingredients:

  • 25g minced shallot

  • 10g minced garlic

  • 400g rice (drained)

  • 1tbsp dark soy sauce


To do:

  • Fry the shallot and garlic

  • Add in the rice and dark soy sauce, fry


5. Assemble


Once all of the above are done, you are ready to assemble your Ba Zhang Cake



Ingredients:

  • Leaves from step 1 (dry it first)

  • Chicken from step 2

  • Mushrooms from step 3

  • Rice from step 4

  • 1 can of abalone (I used New Moon's Royale Braised Abalone 400g)

  • 1 can of Stewed Pork (I used Gulong Stewed Pork 256g)



To do:

  • Place the bamboo leaves in a cake tin. I'm used an 8 inch spring form tin so it is easier to take out later. But feel free to use any other cake tins / bowls you prefer.

  • Put the ingredients in in this order: rice, chicken, rice, mushrooms, braised meat, rice and abalone (or whatever order you like, it doesn't really matter)

  • Steam for 1 hour


Once cooked, garnish with a bit of spring onion, fried shallots and red chilli to make it look pretty. Then get ready to dig in :)


Yes yes, it looks like glutinous rice / lo mai gai / lotus steamed rice. But I wrapped it in bamboo leaves and made it around Dragon Boat Festival. So I'm just gonna call it Ba Zhang Cake. LOL.
