Usher in the Year of the Ox with YUN NANS!

Yun Nans, also known as 云海肴 (pronounced as “Yunhaiyao”) is China is the largest Yunnan F&B chain in the world. This Chinese New Yearr, they will be offering six Chinese New Year set menus catering from 4 to 8 pax (S$298++ to S$838++), and they will be available from 1 February to 28 February 2021.

Here are some of the items available:

1. YUN NANS Prosperity Treasure Hot Pot 火焰聚宝盆菜

I love pen cai and this is definitely one of the best that I've had. The broth is made with a range of ingredients such as jinhua ham, old hens & pork trotters and brewed for six hours to allow all the natural essences of the ingredients to be extracted.

Needless to say, the broth tasted amazing. But what amazed me the most is that the consistency of the broth is not as thick as other pen cai's that I've had. Also, it is flavourful, but not overly salty.

The ingredients include wild morel, wild golden fungus, sea cucumber, abalone, scallops, prawns, mushrooms, fish maw and chong cao hua (cordyceps flowers) while the base is laid with yam and Chinese cabbage.

Regular for 4-6pax: S$288++, Large: S$438++

2. Prosperity Abalone Yu Sheng

Yu Sheng is a a must-have dish for every Chinese New Year feast. Yunnan's version comes with whole abalones. I like abalones, but the best part of this yusheng for me is that they included turnips inside, making it super refreshing. Love it.

S$58.80, 6 pax; S$78.80, 10 pax

3. “Bi Feng Tang" Style Pork Ribs with Truffles 松露避风塘焗大排

The pork ribs are marinated with Yunnan’s special preserved chillis before bring cooked with a crazy amount of deep-fried Yunnan garlic. Slices of black truffle from Yunnan are added for a fragrant.

The pork ribs are super tender and you can really taste the slight spiciness from it. The garlic goes very well with the pork ribs, providing a nice crunch and fragrant to it. Can't taste much of the black truffle though.

4. Traditional Salt Baked Chicken 古法盐焗鸡

The kampung chicken is first braised for an hour, then baked for another hour. The meat is really super tender and juicy.

Half: S$22.80++, Whole: $38.80++

5. Braised Truffle Ee-fu Noodles 松露菌菇煨伊付面

Compared to the other dishes, this looks a bit meh. But don't ever judge a book by its cover. The noodles is cooked with a superior stock made with Yunnan ham and old hen. So yes. the flavour is amazing.

6. Double Boiled Peach Gum and Snow Fungus 安南子炖桃胶雪莲子

Desserts are the perfect ending to any meal. This Double Boiled Peach Gum and Snow Fungus is made with peng da hai (also known as an nan zi), peach gum, snow fungus and snow lotus seeds. Tasted good, not very sweet and is great for nourishing the skin.
